first things first: melt 3oz of "best quality" unsweetened chocolate (i just buy what is on sale:) and 1 and 1/8 cup of butter in a pan over a pan of boiling water (i am sure Martha has some fancy name for it, but i call a spade a spade) Martha says that the top pan can't touch the water below, but i don't really think it matters, to be honest ;)
while it's melting, stir 3/4 cup of flour and 3/4 cup of MINI semisweet chocolate chips. medium sized chocolate chips will NOT suffice :)
let the melted chocolate cool down while you whisk 3 free range eggs, 1 and a half cups of sugar, 3/4 tablespoon of vanilla and 3/4 teaspoon salt
keep whisking for NINE MINUTES till it looks soo pale and soooo frothy that you just want to eat it all raw and be hang to the risk of salmonella poisoning
fold melted chocolate into the above mixture and then fold in the flour mixture, then bake for 20 minutes (no more no less) at 350 degrees. oh yes, you should have preheated the oven before picture number one and also lined a 9x13 tin with greased PARCHMENT PAPER, not wax paper (no thanks to Martha for not saying "make sure you don't use wax paper...")
while brownies are baking, dye hair, paint face green and pretend to be from Kiss, even though technically they didn't wear green make-up :) take care to watch the clock or you'll have undercooked brownies and overdone hair.... (sigh)
the finished brownies are soooo fudgy!!! you may give the edges to your children as they really don't know any better :)

ReplyDeleteI am so envious of you. NY NY! B&H photo!! Our Aussie dollar is so strong right now ($1.04 US!) if I wasn't a single mother with two jobs a child to take care of 24/7 I would be so on the plane to NY to do some shopping.
